The Second Wedge Brewing Co., Uxbridge, ON, Canada
The Second Wedge Brewing Co. is dedicated to brewing beer that brings as much joy to others as the trails of Uxbridge, Ontario bring to us. We’re inspired by the world’s finest small breweries and believe that putting our hearts and souls into our work is what makes it worthwhile.
We get our name from the rolling hills of the Oak Ridges Moraine, which formed in four wedges from west to east. The moraine is a source of fresh water, home to hundreds of species and responsible for some seriously gorgeous trails. It’s a landscape of rollercoaster hills that’s ideal for cycling, running, hiking, riding – all of which make you thirsty. You know where we’re going with this.
We offer four mainstay beers and a selection of rotating seasonals in our tasting room, bottle shop and 3-season beer garden, located just over the railway tracks in downtown Uxbridge. After a day of play outside, fill your glass with flavour.
Foggy Water is a pale 4.6% ABV gruit ale with subtle, fresh evergreen character. We blended spruce tips, foraged by our friends at Foggy River Farm, into the grain and water in the mash. Then we crushed and heated juniper berries from Richter's Herbs to make a tea. This extract, berries and all, was added late in the wort boil. Foggy Water was fermented with Belgian abbey yeast, which contributes a distinct fruitiness.
No hops were harmed in the making of this beer.
