Mystic Brewery is a brewery specializing in farmhouse-style ales utilizing locally sourced yeast and other ingredients. Drawing on historical methods, our increased focus on fermentation allows us to impart a sense of unique New England terroir into all of our beer. Our beer can be found in select bars and restaurants across the country.
#1) FIELD STUDIES. Our first full sized brew of an herbed saison in quite a while. A sunny orange hue and leafy herbalness imparted by 25 pounds of Dandelion Leaf combines with the floral/ honey/vanilla notes of Elderflower for a delicious, summery saison in the dead of winter. Has less than 20 BU's from Perle hops but some nice bitterness on top of that from the dandelion. 6% ABV

#2) LOD. We used last runnings from one of our Double IPA mashes to create a 5.5% ABV gruit brewed with virtually no hops, instead substituting Chamomile, Hibiscus, Rose petals and Heather for juicy floral flavors and aromas. Fermented with British yeast. It's pink!
#3) NOD. This beer pours a honey-esque gold and smells of citrus (think lemon), pepper, and earth. Conditioned on Woodruff, Lemon Balm, Hibiscus and Elderflower. The flavor palate consists of the classic saison profile balanced with notes of lemon and undertones of herbal bitterness. 6.6% ABV
#4) TOD. We collected and boiled last runnings from The Hum, adding Birch Bark, Licorice root, Sassafrass and Cocoa beans to compliment the rich malt character. Juniper berries were then added during conditioning for a piney aroma on top of it all. 6.5% ABV
